Italian Wedding Soup
This easy-to-make, authentic Italian wedding soup recipe is just what you need! Savory meatballs, hearty veggies, and mini pasta, all simmered together to create the perfect combination of flavors. And don't forget the freshly grated cheese and crusty bread to make it all come together for a meal that'll warm you from head to toe.
Ingredients
- ½ cup breadcrumbs Italian breadcrumbs or the equivalent in roughly torn stale bread, fresh
- ½ cup Pecorino Romano cheese plus more for serving, freshly grated, or parmesan cheese
- 1 teaspoon parsley finely minced, fresh
- ¼ onion small
- 1 clove garlic
- ½ teaspoon salt plus more to taste
- ½ cup milk or half and half or water, plus more as needed, whole
- 1 egg large
- 1 pound ground beef or pork, chicken, turkey or a mix of 50% beef, 25% pork, 25% veal
- 3 tablespoons olive oil
- 1 cup celery about 3 stalks, diced
- 1 cup carrot about 2 medium, diced
- 1 ½ cups yellow onion about 1 medium, diced
- 10 cups chicken stock or broth
- 2 bay leaf
- 1 escarole cleaned and roughly chopped, whole head
- ¾ cup Acini di pepe pasta such as Pastina, tubetti, ditalini or orzo, or other small variety
- Pecorino Romano cheese grated; or parmesan; for serving

Notes
- Be careful not to over-mix the meat or it will become tough. To avoid this, make sure all ingredients are thoroughly combined before adding the meat.
- Take the meat out of the refrigerator 15 minutes before making the meatballs so that it's easier to mix.
- I like to rub my hands with either a bit of water or oil when forming the meatballs.
