Ingredients

  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • salt and pepper to taste
  • 12 ounces boneless skinless chicken breast
  • 1-1/2 teaspoons olive oil
  • 1/2 cup part-skim ricotta cheese
  • 1/2 cup diced tomatoes with basil and garlic crushed
  • 3 slices part-skim mozzarella cheese

  1. Preheat oven to 350°F. Combine italian seasoning, garlic powder, salt and pepper; rub over chicken. In a medium skillet, sprayed with cooking spray, brown chicken in oil for 3 to 4 minutes on each side. Place chicken in a baking dish sprayed with oil. Spoon ricotta over chicken. Top with crushed tomatoes and basil. Bake uncovered 15 minutes. Top with mozzarella slices; bake 10 to 15 minutes longer or until chicken is done.
