Jalapeño Coleslaw
This easy Jalapeño Coleslaw recipe features a crunchy mix of fresh vegetables. Tossed in a lightly creamy dressing that's flavored with tangy lime juice and earthy cumin, this simple salad comes together in just one bowl. It's the perfect addition to any picnic or BBQ, and an excellent topping for tacos and burrito bowls!
Ingredients
Dressing
- ½ cup mayonnaise good quality
- ¼ cup sour cream full-fat
- 2 tablespoons granulated sugar
- 3 tablespoons lime juice freshly squeezed
- 1 teaspoon lime fresh, zest
- ½ teaspoon celery salt
- ½ teaspoon cumin
- ½ teaspoon black pepper plus a bit more for sprinkling over the top of the coleslaw, freshly ground
Coleslaw Mix
- 4 cups cabbage green, shredded
- 2 cups red cabbage shredded
- 1 cup carrot shredded
- ½ cup cilantro plus a bit more for sprinkling over the top, leaves, chopped
- ¼ cup onion red, finely chopped
- ¼ cup jalapeno pepper plus a few jalapeno slices for garnish, seeded and finely chopped, use more or less to taste
Instructions
- In a large bowl, whisk together all dressing ingredients.
- Add the coleslaw mix ingredients to the bowl with the dressing, and fold to combine.
- Serve immediately or after a rest in the refrigerator. I personally think it's best enjoyed after resting in the fridge for 30 to 60 minutes. Right before serving, fold coleslaw to combine. Then garnish with a bit of freshly cracked black pepper and chopped cilantro, and tuck in a few jalapeno slices - I like to give people a little heads-up that this slaw includes jalapenos!
