Jalapeno Cornbread Muffins

Jalapeno Cornbread Muffins are great with a salad, BBQ or a bowl of chili. Easy to make and super soft with sour cream and cheese.

Ingredients

  • 1 tablespoon vegetable shortening , for greasing the pan
  • 2 boxes Jiffy cornbread mix , or 2 batches of our homemade version
  • 2 eggs
  • 3/4 cup buttermilk or heavy cream
  • 1/2 cup cheddar cheese , finely grated
  • 2 tablespoons sour cream
  • 2 tablespoons jalapeno brine , juice from the jar
  • 2-3 tablespoens pickled jalapeno rings

  1. Preheat the oven to 350°F and use the vegetable shortening to grease a standard 12 cup muffin tin. This recipes makes 16 muffins, so you can use two or make them in batches. Set tin(s) aside.
  2. In a large mixing bowl, whisk the Jiffy mix until large clumps fall apart.
  3. Add the eggs, buttermilk (or cream, cheese, sour cream and jalapeno brine. Mix until just combined. Do not overmix.
  4. Spoon batter into muffin tins, filling 2/3 of each tin. Place a whole jalapeno slice(s) on the top of the batter.
  5. Bake the muffins for 15-17 minutes or until the tops spring back when gently touched and are a puffy, golden yellow.
