  • 6 hard boiled eggs peeled
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon fresh jalapenos chopped
  • 1 tablespoon Pickled Jalapeno Brine
  • 3 tablespoons mayonnaise
  • 1/2 teaspoon Dill
  • 1 tablespoon lemon juice
  • 2 tablespoons cilantro chopped
  • 1 teaspoon mustard
  • salt and pepper

Instructions

    Cup of Yum
  1. Use a sharp knife to slice the eggs in half lengthways.
  2. Use a teaspoon to gently remove the yolk and place it into a bowl. Then arrange the egg whites on your serving plate. Use a fork to mash the yolks up until they are as smooth as you can get them.
  3. Add the paprika, chopped jalapeno, jalapeno brine, mayonnaise, dill, lemon juice, chopped cilantro, mustard, and salt and pepper to the bowl with the mashed yolks and mix it until everything is coated.
  4. Use a teaspoon to dollop in some of the filling into each egg white hollow. It can mound up a little.
  5. Decorate with sliced jalapeno and serve.
