Jalapeno Lime Shrimp

Succulent Jalapeno Lime Shrimp, marinated in a zesty, fresh jalapeno and lime marinade, are perfect for an easy weeknight meal!  Just sauté the shrimp and you’re ready for tacos or quesadillas, or go tapas-style with a loaf of crusty bread!

Ingredients

  • 1 lb. peeled and deveined jumbo or large shrimp
  • 1 tbsp. minced fresh jalapeno approximately 1 average jalapeno
  • 1 garlic clove minced
  • 1/4 tsp. cumin
  • 2 tbsp. olive oil or avocado oil divided
  • 2 limes the juice of
  • salt & pepper to taste

Instructions

  1. Marinate shrimp in a glass or plastic bowl with the jalapeno, garlic, cumin, lime juice, salt & pepper, and one of the two tablespoons of oil. Stir to combine and set aside for 20 minutes.
  2. After the shrimp have marinated for 20 minutes, heat the other tablespoon of oil in a large skillet. Dump the bowl of shrimp in the skillet, making sure each shrimp is laying flat. Cook for 2-3 minutes, then with tongs, turn each shrimp over and cook another 2-3 minutes. Shrimp are done when pink and no more gray is present.
  3. Use shrimp in tacos, quesadillas, add to some pasta, or serve with a crusty loaf of bread. Enjoy!
