Jalapeño Popper Chicken Soup
This warm and hearty Jalapeño Popper Chicken Soup packs the same bold flavors of a classic jalapeño popper into a cozy bowl of comfort.
Ingredients
- 5 cups chicken stock
- 4 cups chicken I use roasted chicken, shredded, cooked
- 8 ounces cream cheese room temperature
- 1 cup cheddar cheese plus a little more for garnish, shredded
- 6 lices uncured bacon raw and chopped into small pieces
- 3 jalapeno pepper chopped
- ½ cup onion diced
- 1 teaspoon chili seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper ground
Instructions
- Cook the bacon over medium heat in a pot until crisp. Remove the bacon and most of the grease, leaving behind about a tablespoon. Sauté the onion and jalapeño peppers for a few minutes.
- Add in the chili seasoning and allow to toast for about 10 seconds, while stirring. Add in the chicken stock, chicken, remaining salt and pepper.
- Simmer over medium heat for 15 minutes, uncovered. Add in the shredded cheddar and cream cheese, then stir until melted.
- Serve with a healthy garnish of cheddar cheese, bacon and chopped jalapeño peppers.
