Jalapeno Popper Chicken with Bacon

Jalapeno popper casserole is make with the same ingredients as a stuffed jalapenos, but this dish is loaded with chicken and bacon. This low carb casserole will be a family favorite dish!

Ingredients

  • 6 boneless skinless chicken breasts pounded to 1/2 inch thickness
  • salt and pepper to taste
CHEESE LAYER
  • 7 lices of bacon cooked reserve 2 slices for topping
  • 2 jalapeños diced (remove pith)
  • 1/4 cup onion diced
  • 1 8 ounce package cream cheese, softened
  • 1/2 cup mayonnaise
  • 1 cup cheddar cheese shredded
  • 1/2 cup Parmesan Cheese grated
TOPPING
  • 1 9 ounce bag pork rinds, chicharones, crushed
  • 1/2 cup Parmesan Cheese grated
  • 4 tablespoons butter melted

Instructions

  1. Preheat oven to 425 degrees.
  2. Place chicken breasts seasoned with salt and pepper in a 13 x 9 - inch casserole dish and bake for 20 minutes.
  3. While the chicken is baking fry bacon slices in a large skillet. Drain on paper towels and break into pieces (reserve 2 for topping each serving).
  4. Add onion and saute until tender. Remove from heat and cool.
  5. In a large bowl mix together cream cheese, mayonnaise, cheddar and parmesan cheese. Add onions, jalapenos and bacon pieces.
  6. Remove chicken from oven and reduce heat to 350 degrees. Spread jalapeno popper cheese mixture on top of all the chicken breasts.
  7. For the topping mix together the crushed pork rinds, parmesan cheese and melted butte. Prinkle over cheese mix and chicken. Bake until the tops are lightly browned and chicken is thoroughly cooked, about 15 minutes.
  8. Add additional slices of jalapenos and bacon pieces to each serving.
