Jalapeno Popper Quesadillas

Jalapeno Popper Quesadillas have ALL the flavors of jalapeño poppers in a fun package that's perfect for dipping! These little bites make a delicious summer appetizer and can also double as a meal!

Ingredients

  • 2 tortilla 8 inch
  • 1 oz. cream cheese
  • 1 jalapeño sliced, fresh
  • ½ c. Colby jack cheese shredded
  • 4 pieces Bacon cooked and chopped
  • 1 Tbsp. panko bread crumbs
  • 1 Tbsp. olive oil

Instructions

    Cup of Yum
  1. Prepare quesadillas by spreading one tortilla with cream cheese; top with jalapeños, shredded cheese, cooked bacon, and panko bread crumbs.
  2. Place other tortilla on top.
  3. Heat 1/2 Tbsp. olive oil in a large frying pan.
  4. Cook tortilla over medium heat until golden brown on one side.
  5. Add remaining oil and flip; cook until both sides are golden brown.
  6. Serve as is or with sour cream & salsa.
