Jalapeño Poppers

Ingredients

  • 4 lices Bacon
  • 12 Jalapeno peppers
  • 8 oz cream cheese softened
  • 4 oz cheddar cheese shredded
  • 1/2 teaspoon garlic powder
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon smoked paprika
  • 2 tablespoons butter melted

Instructions

  1. Preheat the oven to 400ºF.
  2. Dice the bacon and place it in a skillet over medium heat. Cook the bacon until crisp, then remove with a slotted spoon to a paper towel lined plate.
  3. Cut each jalapeño in half lengthwise. (You’ll probably want to wear gloves while handling the peppers.) Use a paring knife to remove the seeds and ribs. Place the peppers, cut side up, on a baking sheet.
  4. In a bowl, combine the cream cheese, cheddar cheese, garlic powder, and cooked bacon. Stir to combine.
  5. Fill each pepper half evenly with the cheese mixture. 
  6. In a small bowl, combine the breadcrumbs, smoked paprika, and melted butter. Sprinkle the breadcrumb mixture evenly over the peppers.
  7. Bake in the preheated oven until the cheese is melted and the peppers are tender, 18-20 minutes.
  8. Serve warm or at room temperature.
