Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup yellow onion finely diced
  • 1 jalapeño finely diced or sliced plus more for garnish if desired
  • salt to taste
  • black pepper to taste
  • 2 1/2 cups cheddar cheese grated, sharp
  • 1/4 cup jack cheese grated, or mozzarella
  • cilantro for garnish

Instructions

  1. In small cast-iron skillet, heat olive oil over medium heat. Saute onions and jalapeños with salt and pepper until tender and brown.
  2. Remove hot skillet from heat and stir in cheeses to melt.
  3. Top with cilantro and more jalapeños is desired. Serve immediately.
