Japanese Seasoning Soy Sauce

Dashi Shoyu, or Japanese seasoned soy sauce, is a versatile condiment and seasoning packed with umami and goes great with soups, stews, sauces, or dressings.

Ingredients

  • 1 cup soy sauce
  • 2 teaspoons evaporated cane sugar
  • 4 grams konbu
  • 8 grams katsuobushi

Instructions

  1. Stir the sugar into the soy sauce until it dissolves.
  2. Add the konbu and katsuobushi to the soy sauce, cover, and refrigerate for at least 24 hours to infuse the soy sauce.
  3. Remove the konbu and pass the soy sauce through a fine mesh strainer, pressing on the solids. Store the dashi soy sauce in a bottle in the refrigerator.
