Japanese Sesame Sauce

Although it's most commonly associated with Shabu Shabu, Japanese sesame sauce or Goma Dare is a versatile condiment used for dipping, dressing, or seasoning a wide variety of foods. My Goma Dare recipe is easy to make in the blender and makes for a creamy umami-rich sauce that's packed with sesame flavor.

Ingredients

  • 30 grams toasted sesame seeds ~¼ cup
  • 5 grams katsuobushi
  • ½ cup Tahini or Asian sesame paste
  • ½ cup water
  • ¼ cup soy sauce
  • 1 tablespoon evaporated cane sugar
  • 1 tablespoon toasted sesame oil
  • ¼ teaspoon salt

Instructions

  1. Add the toasted sesame seeds and katsuobushi to a blender or food processor and blend until the mixture becomes powder.
  2. Add the tahini, water, soy sauce, sugar, sesame oil, and salt and blend until smooth.
  3. Store in a sealed container in the refrigerator until you are ready to use it. It should last at least 2 weeks.

Notes

  • This recipe makes 1 ½ cups of sauce.
