Ingredients

  • olive oil
  • 30 g yellow onion peeled and thinly sliced
  • 10 g carrot peeled
  • 10 g ginger root peeled
  • 15 g apple peeled
  • 1 clove garlic (large clove, double if using smaller cloves)
  • 3 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp rice vinegar
  • 1 tbsp sake
  • 1 tbsp red wine
  • 1 tbsp honey

Instructions

  1. Heat a small frying pan on a medium setting and add a drizzle of olive oil. Sauté 30 g yellow onion until soft and golden, then remove from the heat.
  2. Transfer the onion to a blender and add all the other ingredients. Blend until smooth. (Alternatively, move onto the next step and use an immersion blender.)
  3. Pour the sauce into a saucepan and bring to almost boiling over medium heat.
  4. Once almost boiling, reduce the heat to medium-low and simmer for about 3 minutes. Stir occasionally.
  5. Turn off the heat and allow to cool to your preferred temperature before serving. Transfer to a pourable container and enjoy with your favorite steak!
