Ingredients
- 1 cup dry tri-colored quinoa , rinsed
- 2 cups low-sodium chicken or vegetable stock
- 15 ounces chickpeas , drained and rinsed
- 1 cup English cucumber , diced
- 3/4 cup small red onion , minced
- 1/2 cup fresh parsley , chopped
- 1/2 cup fresh mint leaves , chopped
- 1/2 cup salted pistachios , shelled and coarsely chopped
- 1 cup feta cheese , crumbled
- 1/2 cup olive oil or avocado oil
- 1/2 cup fresh lemon juice
- 2 teaspoon fresh lemon zest
- 1 teaspoon coarse kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Rinse the quinoa in a fine mesh sieve or fine colander.
- Add the quinoa to a small saucepan with the stock. Bring to a rapid boil, then reduce to a low simmer and cover for 15 minutes until tender and chewy.
- Transfer to a bowl or dish and chill uncovered for 30 minutes.
- In a large mixing bowl, combine the chilled quinoa, chickpeas, cucumber, onion, parsley, mint, pistachios, feta, oil, lemon juice, lemon zest, salt and pepper. Gently toss.
- Serve or store for later.
