Jerk Pork Sliders

These Jerk Pork Sliders feature tender pork tenderloin slices marinated in jerk seasoning and cooked with sautéed bell peppers and onions seasoned with soy sauce and herbs. Ingredients

  • 1 lb pork tenderloin cut into ½ inch slices, 453g
  • 6 tablespoons jerk seasoning marinade
  • 3 tablespoons olive oil divided
  • 3 cups onion or 3 medium onions, sliced into strips, frozen, sliced, 525g
  • 2 cups bell pepper or 2 bell peppers, seeded and cut into strips, frozen, strips, 350g
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon thyme dried
  • 1 tablespoon soy sauce
  • 12 slider buns or dinner rolls

Instructions

  1. Marinate the pork tenderloin pieces in the jerk seasoning
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  3. Add the sliced onions and peppers and cook for 2 mins, then reduce the heat to medium-low and cook for 15 mins, stirring frequently.
  4. Turn the heat down to low and add the soy sauce, salt, pepper and thyme and cook for 2 more minutes. 
  5. Transfer peppers and onions to a bowl and set aside.
  6. Turn the heat back up to medium and add more olive oil in the skillet.
  7. Remove pork from marinade, add to the skillet and cook for about 12 minutes, stirring frequently.
  8. Slice dinner rolls in half and place 1-2 pieces of pork on each bottom piece. Top the pork with the onions and peppers and then serve.

Notes

  • Hawaiian rolls are recommended for their sweet flavor and soft texture.
  • Toast and butter slider buns under the broiler to add a crispy texture and richer flavor.
  • Substitute pork with shredded chicken for a different variation while maintaining the seasoning style.
  • Top sliders with coleslaw, pineapple salsa, or cheese slices for added flavor.
  • This recipe yields about 12 sliders, suitable for serving 6 people, assuming 2 sliders each.
