Ingredients
- 2 cans black beans (drained and rinsed)
- 2 tablespoon avocado oil
- 1 c mushrooms chopped by hand or in a food processor
- ½ c red onion minced
- ½ c red bell pepper chopped by hand or in a food processor
- ½ c breadcrumbs choose gluten-free in you need to
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon sea salt

Instructions
- Heat avocado oil in a medium skillet over medium heat. Add onions and cook for 3 minutes, stirring occasionally.
- Add the sliced mushrooms and the red pepper bell and cook for 5-7 minutes, until the mushrooms are slightly browned, and the vegetables are tender.
- In a large bowl, mash the black beans until they form a thick paste.
- Add the cooked veggies, breadcrumbs, onion powder, garlic powder, and salt to the bowl.
- Mix until well combined.
- Divide the mixture into four equal portions and shape each into a patty. You can use a rounded-shaped mold to make it easier.
- Heat a little olive oil in a large skillet over medium-high heat. Add the patties and cook for 3-4 minutes on each side, until golden brown.
- Serve the burgers on buns with your favorite toppings, such as avocado, tomato, lettuce, mayonnaise, or caramelized onions.

Notes
- Mushrooms. You can make this easy vegetable burger with Cremini mushrooms or button mushrooms. If you fancy, Shiitake will give this plant-based burger an excellent flavor.
- Veggies: Add other vegetables to the mix, like bell peppers, carrots, or zucchini. Finely chop or shred them before adding them to the burger mixture.
- Toppings. Top the vegan black bean burger with your favorite toppings like vegan cheese, avocado, pickles, caramelized onions, or sautéed mushrooms.
- Storage. Store the leftovers of vegan black bean burgers with mushrooms in an airtight container in a refrigerator for about three days.
- Freezing. Alternatively, you can freeze them. It is handy if you prep meals and make a big batch of burgers.
- First, you need to flesh-freeze them. Place the uncooked burgers on a parchment-lined baking sheet and put them in a freezer for about an hour until the veggie burgers are firm.
- Remove from the freezer and stack the burgers in freezer-friendly storage bags. Vegan black bean burgers can be frozen for up to 3 months.
- Cook frozen black bean patties in a 400 F oven for about 10-15 minutes on each side. Don't forget to spray the top of the burger to obtain a delicious and crispy top.
