Kachumber Salad Recipe (Indian Salad)

Toss fresh veggies with mint and lemon juice for a simple but refreshing, crunchy, and flavorful cucumber salad that's perfect to serve with your favorite Indian dishes.

Ingredients

  • ¾ cup diced English cucumber
  • ¾ cup diced fresh tomato
  • 1/3 cup diced red onion
  • 1/3 cup diced radish optional
  • 1/3 cup chopped cilantro
  • 2 tablespoons chopped mint leaves optional
  • 2 teaspoons fresh lemon juice
  • 1/8-1/4 teaspoon kashmiri chili or cayenne
  • salt and pepper

Instructions

  1. Set out a medium mixing bowl. Finely dice the cucumber, tomato, red onion, and radishes into ¼-inch cubes.
  2. Chop the fresh cilantro and mint leaves.
  3. Combine all fresh ingredients in the bowl. Drizzle lemon juice over the top and sprinkle with Kashmiri chili. Then add a generous sprinkle of salt and pepper. Toss well, taste, and add additional lemon juice, salt, or pepper as desired.
  4. Covered refrigerate until ready to use.

Notes

  • Kachumber salad will keep well for up to a week in the fridge stored in an airtight container. But note that the veggies will be most crisp for the first few days.
