Kadha
Kadha is a traditional spiced herbal tea made by boiling water with black peppercorns, cloves, grated ginger, turmeric, and optional lemongrass and jaggery. The herbs and spices release flavorful and warming compounds into the water as it reduces, resulting in a potent, aromatic beverage known for its comforting qualities. The jaggery adds natural sweetness to balance the spices. Served hot, kadha provides a fragrant and soothing drink.
Ingredients
- 3 cups water
- 4 black peppercorns
- 4 cloves
- 2 teaspoons ginger grated
- 2 pinches Turmeric ground
Optional
- 1 tablespoon lemongrass leaves fresh, frozen or air dried
- 2 teaspoons jaggery honey or sweetener of choice
Instructions
- Add water to a saucepan over medium-high heat. Using a mortar and pestle, coarsely grind black peppercorns and cloves and add to the water
- Add grated ginger, lemongrass, and ground turmeric. Boil everything together until the tea reduces to half; about 15 minutes on medium-high heat.
- Add jaggery and cook for another two minutes as the jaggery melts
- Strain in 2 cups and serve hot
Notes
- Frozen ginger paste or dry ginger powder can be used instead of fresh ginger; use 1 teaspoon dry ginger powder per 3 cups water.
- Fresh organic turmeric root can replace turmeric powder; grate 1 teaspoon per 3 cups water.
- Additional spices like cinnamon and cardamom may be added along with peppercorns and cloves for flavor variation.
- To increase the kadha's strength, boil it longer to reduce more water and concentrate flavors.
