Kale and Egg Power Bowl

An easy and nutritious breakfast with eggs, kale and bacon.

Ingredients

  • 1 tablespoon coconut oil
  • 2 cups kale
  • 3 oz Canadian bacon
  • 3 eggs
  • ½ avocado
  • salt and pepper

Instructions

    Cup of Yum
  1. Cut Canadian bacon into small slices and saute about five minutes until some color develops. Remove from pan.
  2. Saute kale in same pan in 1 tbsp. of coconut oil, about five minutes or until it wilts. Sprinkle with salt and remove from pan.
  3. Break three eggs and whisk with a fork. Add salt and pepper and cook until desired doneness.
  4. Assemble in a bowl with slices of avocado.
