Kale and Mixed Beans Salad
Delicious, healthy and easy mixed bean and kale salad. Even the homemade dressing is super fast as well!
Ingredients
- 1 15/16 ounces mixed beans canned, rinsed and drained
- 4 cups kale washed, shredded
- 2-3 tablespoons red onion finely diced
Salad Dressing:
- 1 teaspoons lemon zest
- 1 tablespoons mustard European style like Brassica with whole mustard seeds
- 1/2 teaspoon garlic herb seasoning
- 2 tablespoons lemon juice fresh
- 2 tablespoons olive oil
- 1 teaspoon honey
Instructions
- In a large bowl, add beans, kale and onion.In a small measuring cup, combine the remaining ingredients, whisking together thoroughly.
- Pour over the kale and beans. Mix in completely, covering all the salad.
- Place in the refrigerator for at least half an hour before serving. You can let this sit for a few hours while the dressing softens the kale leaves, the longer the better!
- Serve and enjoy!
