Kale Apple Salad Recipe

Kale apple salad is one of our favorite kale salad recipes. The kale is softened with a sweet salad dressing and then mixed with crunchy apples, toasted almonds, and cheddar cheese. It's delicious!

Ingredients

  • 2 ½ 2 ½ cups well-packed kale leaves
  • ½ ½ cup diced cheddar cheese
  • ½ ½ cup toasted chopped almonds slivered or sliced work, too
  • 1 1 large apple diced
The Dressing
  • ⅓ ⅓ cup apple cider vinegar
  • ¼ ¼ cup honey can sub maple syrup
  • 2 2 teaspoons balsamic vinegar
  • 1 1 teaspoon Dijon mustard
  • 2 2 cloves garlic grated on a Microplane or very finely minced
  • A pinch of sea salt
  • ½ ½ cup extra virgin olive oil

Instructions

  1. Place the dressing ingredients into a 2-cup mason jar and shake well.
  2. Add the kale to a large salad bowl, pour the dressing over top and mix well. Let the kale sit for 5 minutes to soften.
  3. Add all the remaining ingredients and mix together.
