Kale Apple Salad Recipe
Kale apple salad is one of our favorite kale salad recipes. The kale is softened with a sweet salad dressing and then mixed with crunchy apples, toasted almonds, and cheddar cheese. It's delicious!

Ingredients
- 2 ½ 2 ½ cups well-packed kale leaves
- ½ ½ cup diced cheddar cheese
- ½ ½ cup toasted chopped almonds slivered or sliced work, too
- 1 1 large apple diced
The Dressing
- ⅓ ⅓ cup apple cider vinegar
- ¼ ¼ cup honey can sub maple syrup
- 2 2 teaspoons balsamic vinegar
- 1 1 teaspoon Dijon mustard
- 2 2 cloves garlic grated on a Microplane or very finely minced
- A pinch of sea salt
- ½ ½ cup extra virgin olive oil
Instructions
- Place the dressing ingredients into a 2-cup mason jar and shake well.
- Add the kale to a large salad bowl, pour the dressing over top and mix well. Let the kale sit for 5 minutes to soften.
- Add all the remaining ingredients and mix together.
