Ingredients

  • 8 ounces kale stems removed and leaves chopped
  • 1 medium granny smith apple cored and diced
  • ½ cup dried cranberries or dried cherries
  • 2 ounces feta cheese crumbled
  • 1 cup walnuts
For the dressing:
  • 3 tablespoons olive oil
  • 1 ½ tablespoons apple cider vinegar or white wine vinegar
  • 1 tablespoon smooth Dijon mustard
  • 1 ½ teaspoons honey or maple syrup
  • sea salt and freshly ground pepper to taste

  1. In a large mixing bowl, combine the kale, diced apple, dried cranberries, and crumbled feta cheese.
