Kale Apple Slaw

Kale Apple Slaw is a delicious and healthy twist on traditional coleslaw. This vegan and gluten free recipe is perfect served as a side dish at BBQs or added to pulled pork or brisket sandwiches.

Ingredients

  • 2 cups flat leaf kale
  • 2 cups red cabbage shredded
  • ½ cup red onion thinly sliced
  • 1 Fuji apple cored and shredded
  • 1 cup carrots julienned
  • ½ cup fuji apple vinaigrette dressing click link for the recipe

Instructions

  1. Cut the kale leaves from the stems and discard the stems. Thinly slice the kale leaves.
  2. Add all of the ingredients to a large bowl. Toss to combine.
  3. Serve immediately or cover and refrigerate for up to 24 hours, or until ready to serve.
