Ingredients

  • 2 cups cooked quinoa
  • 1 cup pomegranate seeds
  • 2 cups cherry tomatoes sliced
  • 1 cup cucumber sliced
  • 2 cups kale chopped
  • 1 lemon juiced
  • 1/2 tsp black pepper
  • 2 tbsp avocado oil
  • 1/2 tsp salt adjust to taste

Instructions

  1. In a small dish, combine lemon juice, oil, salt and pepper to create your dressing. Whisk to combine and set aside.
  2. Place quinoa, chopped kale, cucumber, tomatoes and pomegranate seeds in a large mixing bowl.
  3. Right before serving, drizzle the dressing all over the salad. Serve right away and enjoy!
