Ingredients

  • 2 kale stems removed and leaves chopped, bunches
  • 5 tablespoons olive oil
  • 2 1/2 tablespoons lemon juice fresh
  • 1/3 cup Parmesan Cheese grated
  • 6 tablespoons almonds toasted, sliced
  • 1 apple peeled, cored, and diced
  • 1/4 cup dried cranberries
  • salt to taste
  • black pepper to taste
  • 1 to 2 teaspoons honey

Instructions

  1. In a large bowl, combine the chopped kale with olive oil and lemon juice. Massage the kale with your hands for about 2-3 minutes until the leaves start to soften and wilt.
  2. To the kale, add the grated Parmesan cheese, toasted sliced almonds, apple pieces, and dried cranberries. Season with salt, black pepper, and honey to taste, and toss everything together to combine.
  3. Serve the salad straight away, or let it sit for about 10 minutes to allow the flavors to meld together. If desired, drizzle on additional olive oil before serving.
