Kare Kare Buntot ng Baka

Filipino kare kare oxtail cooked in peanut sauce

Ingredients

  • 4 lbs. ox tail
  • 1 Knorr beef cube
  • 1 cup peanut paste
  • 2 teaspoons annatto powder
  • 6 cups water
  • 1 onion diced
  • 4 cloves garlic chopped
  • Ground black pepper and fish sauce to taste
  • 3 tablespoons cooking oil
Vegetable ingredients:
  • 1 Chinese eggplant sliced
  • 12 ounces banana blossoms
  • 1 bunch bok choy
  • 15 string beans cut into 2-inch pieces

Instructions

  1. Boil water. Add the vegetable ingredients. Cook this for 2 minutes. Remove and soak it in a bowl with cold water for 3 minutes. Drain the water and dry the vegetables. Set it aside.
  2. Heat cooking oil in a pot. Saute the garlic and onion.
  3. Add the Ox tail once the onion softens. Saute it until the color turns light brown.
  4. Pour the water that was used to cook the vegetables into the cooking pot. Cover and bring it into a simmer. Continue cooking until the ox tail tenderizes.
  5. Add Knorr Beef Cube, peanut paste, and annatto powder. Cook for 10 minutes.
  6. Season with fish sauce and ground black pepper.
  7. Transfer to a serving bowl. Top with blanched vegetables. Serve with shrimp paste (bagoong alamang).
  8. Share and enjoy!
