Keto Almond Joy Chocolate Mousse

A rich and decadent mousse with flavors reminiscent of your favorite coconut and almond flavored candy bar except this treat is low carb and sugar free!

Ingredients

  • 1 cup mascarpone cheese
  • 1 cup unsweetened coconut cream see notes
  • ⅓ cup unsweetened cocoa powder
  • ⅓ cup powdered Allulose
  • ¼ cup heavy cream
  • 2 tablespoons slivered almonds toasted
  • 2 tablespoons unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • Optional: chopped sugar-free chocolate

Instructions

  1. Add the mascarpone cheese and coconut cream to a large mixing bowl and whip togethering using a hand mixer.
  2. Add in the remaining ingredients and continue mixing until everything is well combined, smooth and creamy.
  3. Chill in the fridge until it has firmed up some, then top with toasted slivered almonds, shredded coconut and the optional chopped chocolate and serve.

Notes

  • If you don't have Allulose, you can substitute with ¼ cup Swerve confectioners.  Taste the mousse before chilling to see if it needs a little more Swerve, if so, then add a little more.
  • If you can't find unsweetened coconut cream, refrigerate a can of unsweetened coconut milk overnight.  Once the cream solidifies and separates from the liquid, scoop out 1 cup and use it in the mousse.
