Ingredients
Arugula salad
- 4 cups arugula
- 1 small red onion thinly sliced
- 1 medium red bell pepper thinly sliced
- 4 tablespoons pumpkin seeds (pepitas)
- 1 tablespoon black sesame seeds
Balsamic vinaigrette
- 4 tablespoons extra virgin olive oil
- 3 tablespoons balsamic vinegar
- 2 tablespoons fresh lime juice
- ½ teaspoon fine salt adjust to taste
- 1 teaspoon ground black pepper adjust to taste
- 1 teaspoon Freshly ground white pepper adjust to taste
Instructions
- Add all arugula salad ingredients to a large bowl.
- In a medium bowl, add all the vinaigrette ingredients and whisk until fully blended. You can also add them all to a mason jar, close the lid and shake vigorously.
- Before serving, quickly mix the vinaigrette (if it separated) and drizzle on top of the salad, then toss to combine.
