Ingredients

  • 1/4 cup Super Fine Almond Flour
  • 1 ½ Tbsp sugar-free sweetener
  • 1/8 tsp baking soda
  • Pinch sea salt
  • 1.5 Tbsp melted or butter or ghee
  • 1 egg yolk
  • 2 Tbsp blueberries

Instructions

    Cup of Yum
  1. Stir everything but the blueberries together in a mug until everything is well-combined. The mixture will be thick, like cookie dough!
  2. Press the blueberries into the dough. 
  3. Microwave for 30 to 60 seconds, until the muffin is cooked through. I do about 40 seconds.
  4. Dig in!
