Keto Broccoli Salad

Ingredients
- 6 lices Bacon
- 4 cups broccoli diced into 1/4 inch pieces, florets
- 1/2 cup cheddar cheese shredded
- 1/4 cup red onion finely chopped
- 1/4 cup nuts chopped, of choice
- 1/4 cup sunflower seeds
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon erythritol powdered, or keto-friendly sweetener
Instructions
- Cook bacon in a pan over medium-high heat until crispy, then chop into bite-sized pieces.
- Whisk together sour cream, mayonnaise, apple cider vinegar, and keto-friendly sweetener in a small bowl to create the dressing.
- Combine broccoli, cheddar cheese, red onion, nuts, sunflower seeds, and prepared dressing in a large salad bowl, tossing well to coat.
- Serve the salad immediately or refrigerate, covered, to chill and meld flavors for up to 2 days.
