Keto Burrito Bowl
Packed with bold flavors and fresh ingredients, this Keto Burrito Bowl is loaded with savory meat, creamy avocado, and tangy chipotle aioli.
Ingredients
- 1 batch ground beef for taco meat
- 1 batch cauliflower rice lime and cilantro flavored
- ½ batch chipotle aioli (use sour cream, instead of mayo)
- 1 cup cherry tomato halved
- 1 cup cheddar cheese shredded
- 2 avocado sliced thinly, haas
Instructions
- Prepare the taco meat, according to the recipe.
- Prepare the lime cilantro cauliflower rice, according to the recipe.
- Prepare the chipotle aioli, but replace the mayonnaise with sour cream instead. This will give a more tangy flavor to the sauce that is perfect for this dish.
- Add some of the taco meat to a bowl. This recipe makes 4 servings, so ideally you'll add ¼ of the meat. Add in some of the lime cilantro cauliflower rice.
- Cut ½ an avocado into thin slices, then add it to the bowl fanned out. You'll need ½ avocado for each of the 4 bowls.
- Add some of the cherry tomatoes, shredded cheddar cheese and a dollop of the chipotle aioli to the bowl and serve.
