Ingredients

  • 1 batch ground beef for taco meat
  • 1 batch cauliflower rice lime and cilantro flavored
  • ½ batch chipotle aioli (use sour cream, instead of mayo)
  • 1 cup cherry tomato halved
  • 1 cup cheddar cheese shredded
  • 2 avocado sliced thinly, haas

Instructions

  1. Prepare the taco meat, according to the recipe.
  2. Prepare the lime cilantro cauliflower rice, according to the recipe.
  3. Prepare the chipotle aioli, but replace the mayonnaise with sour cream instead. This will give a more tangy flavor to the sauce that is perfect for this dish.
  4. Add some of the taco meat to a bowl. This recipe makes 4 servings, so ideally you'll add ¼ of the meat. Add in some of the lime cilantro cauliflower rice.
  5. Cut ½ an avocado into thin slices, then add it to the bowl fanned out. You'll need ½ avocado for each of the 4 bowls.
  6. Add some of the cherry tomatoes, shredded cheddar cheese and a dollop of the chipotle aioli to the bowl and serve.
