Keto Cauliflower Mash

This delicious Keto Cauliflower Mash is an easy and nutritious low-carb substitute for mashed potatoes. This simple recipe comes together in less than 30 minutes using 4 basic ingredients.

Ingredients

  • 1 head cauliflower
  • 2 Tablespoons butter
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Use a knife and cutting board to cut the cauliflower into large chunks.
  2. While chopping the cauliflower, bring a large pot of water to a boil or high heat. Once the water boils, add the chopped cauliflower. Reduce the heat to medium-high and simmer until the cauliflower is tender and easily pierced with a fork, about 15-20 minutes.
  3. Then, thoroughly drain the cauliflower in a colander shaking off any excess moisture.
  4. Add the drained cauliflower, butter, salt and pepper to a mixing bowl and mix at medium speed until a puree has formed. (Alternatively, puree the cauliflower in a food processor for a smoother puree.) Serve immediately after mixing.

Notes

  • To make this Keto Cauliflower Mash recipe even easier, use 2-12 oz bags of frozen cauliflower florets and follow this recipe to skip the step of chopping the cauliflower.
