Ingredients
- 1 tablespoon olive oil
- 3 ounces onion diced
- 1 clove garlic finely minced
- 10 ounces ROTEL
- 1 tablespoon tomato paste
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon salt
- 12 ounces cauliflower rice
Instructions
- Heat olive oil in a large skillet over medium high heat.
- Add the onion to the skillet and cook for 3 minutes. Then add the garlic and continue to cook for another 2 minutes until the onion is translucent.
- Pour the Rotel into the skillet along with the tomato paste, chili powder, cumin, and salt. Stir together.
- Add the cauliflower rice and stir everything together cooking for 3-5 minutes until the cauliflower rice is tender.
- Serve immediately.
