Keto Chicken Salad Recipe
Versatile low carb chicken salad recipe using pre-cooked chicken for ease. Enjoy this keto chicken salad over vegetables or right out of the bowl.
Ingredients
- 4 cups chicken diced or shredded, cooked
- ½ cup mayonnaise
- 2 tablespoons mustard dijon or yellow, spicy brown
- 2 stalks about 1 cup celery, chopped
- ½ cup green onions chopped
- 2 tablespoons dill chopped, fresh
- 1 tablespoon parsley chopped, fresh
- 1/4 cup nuts
- salt to taste
- black pepper to taste
Instructions
- In a large bowl, stir together mayonnaise, mustard, dill and parsley
- Stir in chicken, green onions and celery until well combined
- Fold in nut (optional)
- Season with salt and pepper to taste
- Refrigerate at least 2 hours before serving
- Serve on a bed of lettuce, tomatoes, sweet peppers, lettuce wraps or low carb biscuit.
