Ingredients

  • 1 3/4 ounces dark chocolate chopped
  • 1 tablespoon unsalted butter
  • 3/4 cup heavy cream
  • 2 1/2 teaspoons cocoa powder
  • sugar-free powdered sweetener to taste

Instructions

  1. In the microwave, melt the chocolate and butter in 20-second increments, stirring between cooking times until smooth. Set aside and partially cool.
  2. In a bowl, use an electric mixer to combine the heavy cream, cocoa powder, and powdered sweetener, adjusting sweetness as needed. Stop mixing once it is slightly thickened.
  3. Gently mix the chocolate mixture into the cream mixture, then use an electric mixer to beat the mousse until soft peaks form.
  4. Refrigerate for at least 2 hours before serving.
