Keto Cinnamon Roll Waffles with Cream Cheese Icing

Ingredients

For the Waffles
  • 1 cup almond flour
  • ½ cup butter melted
  • 1 tablespoons oat fiber
  • 3 whole eggs
  • ⅔ cup unsweetened almond milk
  • 3 tablespoons  monk fruit/erythritol or powdered Swerve
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • non-stick spray
For the Cream Cheese Icing
  • 2 tablespoons cream cheese softened
  • 2 teaspoons monk fruit/allulose or powdered Erythritol
  • ¼ teaspoon pure vanilla extract
  • 1 tablespoon hot water (or more)

Instructions

To Make the Waffles

  1. In a mixing bowl, add in the almond flour, oat fiber, cinnamon, nutmeg, baking powder and salt. Whisk to combine and set aside.
  2. In a separate bowl, add the eggs, sweetener, vanilla extract, melted butter and the almond milk.  Mix using a hand mixer until well combined.
  3. Add in the dry ingredients and continue mixing, just until combined.
  4. Brush your waffle plates with a mild flavored oil and pour the batter in, leaving a little space around the edge to allow for spreading. Cook according to your waffle maker's directions.
To Make the Cream Cheese Icing
  1. While the waffles are cooking, add all the icing ingredients to a bowl and whisk until smooth and well combined.  Remove cooked waffles from the maker and top with a drizzle of the cream cheese icing.
