Keto Coffee Creamer

This easy Keto Coffee Creamer has a perfectly creamy texture, infused with warm and sweet vanilla flavor.

Ingredients

  • 2 ½ cups heavy cream divided
  • 1 cup almond milk unsweetened vanilla
  • ½ cup Monk Fruit Sweetener or allulose
  • ¼ cup butter
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Heat a saucepan to medium low and add in 2 cups of the heavy cream, butter and sweetener, then whisk to combine.
  2. Allow the mixture to come to a boil, then simmer on low heat for 30 minutes, stirring often.
  3. Remove from the heat and allow the mixture to cool before moving onto the next step.
  4. Once the mixture has cooled, whisk in the almond milk, remaining ½ cup of heavy cream and vanilla extract.
  5. Pour the mixture into a tall airtight jar or large mason jar and store it in the fridge for up to 10 days.

Notes

  • Makes 3 cups, serving size 2 tablespoons
  • If you can't find vanilla almond milk, you can use plain and just add twice the amount of vanilla extract.
  • If you can't have almond milk, you can use unsweetened coconut milk instead.  Just know that the creamer will have a coconut flavor.
  • If you don't have monk fruit/allulose, you can use Swerve confectioners.  I don't recommend using things with Erythritol because it can recrystalize as it cools.
