Keto Cranberry Orange Bread (Gluten-Free)

Sweet juicy cranberries with a hint of orange flavor makes this Keto Cranberry Orange Bread absolutely delicious! Made with almond flour, this gluten-free bread is perfect to serve at your next special breakfast or brunch!

Ingredients

For the Bread
  • 1 ¾ cups Super Fine Almond Flour
  • ¼ cup oat fiber see notes
  • 2 cups fresh cranberries
  • 3 eggs
  • ½ cup sour cream
  • ¼ cup heavy cream
  • ⅔ cup Swerve confectioners
  • 2 teaspoons baking powder
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • Pinch of salt
For the Glaze
  • ¼ cup Swerve confectioners
  • 1 tablespoon fresh orange juice
  • 1-2 teaspoons heavy cream or as needed

Instructions

  1. Preheat oven to 325F. Mix together the almond flour, oat fiber, baking powder and salt in a bowl, then set aside.
  2. In a separate bowl, mix together the eggs, sour cream, Swerve confectioners, heavy cream, orange zest, vanilla and orange extracts.
  3. Add in the dry ingredients and mix just until combined. Stir in the cranberries, then pour the batter into a loaf pan that’s been sprayed with nonstick spray.
  4. Bake for 40-45 minutes, or until a toothpick, when inserted comes out clean. Mine took exactly 45 minutes. While the loaf is cooling, mix together the ingredients for the orange glaze and drizzle over the top of the loaf before serving.
  5. Store leftovers in the fridge in an airtight container for several days or freeze.

Notes

  • Note: This is not an overly sweet bread.  So if you prefer it on the sweeter side, you can add more of the Swerve Confectioners.
  • Oat Fiber is made from grinding the outer husks of oats. How healthy is oat fiber? It's pure insoluble fiber, which doesn't dissolve in water and isn't broken down in the digestive tract, so it has zero net carbs and is perfect for a Keto Diet.   • To get the best results, it's best to use oat fiber if you can. If you're unable to find it, try a combination of psyllium husk powder and coconut flour. Since both are very absorbent, you might have to add more liquid.
