Ingredients
- 1 cup turkey drippings
- 1 cup chicken stock
- ¼ cup butter
- ¼ teaspoon xanthan gum
- ¼ teaspoon ground black pepper
- salt to taste
Instructions
- Strain the turkey drippings through a fine mesh sieve.
- Add the butter to a shallow saucepan over medium heat.
- Once the butter has melted, whisk in the turkey drippings and chicken stock.
- Slowly sprinkle the xanthan gum in as the stock mixture is simmering, whisking the entire time.
- Continue to simmer until the gravy has thickened and slightly reduced, about 8-10 minutes. Too much xanthan gum could ruin the texture of your gravy, so I don’t recommend adding more xanthan gum. The gravy will also thicken further as it cools.

- You can also use this same recipe for Chicken Gravy. Just substitute the turkey drippings with chicken drippings and follow the rest of the recipe.
