Keto Italian Hazelnut Cookies
These keto hazelnut cookies are an easy version of the Italian brutti ma buoni cookies, with only 3 ingredients and just 1 net carb per cookie!

Ingredients
- 1 cup hazelnuts roasted and peeled
- 1 large egg white
- ¼ to ⅓ to ⅓ cup golden erythritol sweetener Add more if you prefer sweeter cookies
Instructions
- Start preheating the oven to 320°F (160°C).
- Use a food processor to roughly grind the roasted hazelnuts, or pop them into a bag and crush them with a rolling pin.
- Whip the egg whites with a pinch of salt until white and foamy, then gradually add the sweetener, a little at a time, while whisking to medium peaks.
- Gently fold the ground hazelnuts into the meringue until fully combined. The egg whites may deflate slightly, but that’s fine.
- Spoon the cookie dough onto a baking pan lined with parchment paper. I made 9 large cookies, you can make up to 12 smaller ones. These cookies spread quite a bit, so try to drop the dough into small, neat piles. To help them keep their shape, gently push the sides in a little.
- Bake the cookies at 320°F (160°C) for about 13 to 15 minutes, or until the tops are dry and the edges are golden. For softer cookies, bake a minute or two less; for crispier ones, bake an extra minute or two – but keep an eye on them as they can burn quickly.

Notes
- ¾ cup.
- You can replace hazelnuts with almonds 1:1, but the flavor will be very different. If you want a keto Italian cookie recipe with almonds, I suggest using this one.
- If you have raw hazelnuts, please roast and peel them (see how to do it here) before using them in this recipe, it will really enhance the flavor of the cookies.
- You can use a store-bought hazelnut flour/meal instead of grinding at home, it will result in smoother looking cookies (not "ugly"). Use the same amount in grams or ¾ cup.
- If you don't have brown keto sweetener, you can add ½ teaspoon of blackstrap molasses, added together with regular white sweetener (erythritol) when beating the egg whites.
