Keto Key Lime Pie Cheesecake

This easy no-bake lime pie cheesecake is made with sugar-free & low-carb condensed milk. It's sweet, tart, zesty and refreshing! The perfect summer dessert!

Ingredients

Pie crust
  • 1 1 recipe keto Graham cracker pie crust
Filling
  • 2 2 cups sugar-free sweetened condensed milk
  • 16 16 oz cream cheese (room temperature)
  • ⅓ ⅓ cup fresh key lime juice or regular lime juice
  • 2 2 teaspoons lime zest
Optional garnishes
  • sugar-free whipped cream
  • Lime slices

Instructions

  1. Make a double recipe of sugar-free condensed milk - simply double the amount of ingredients. Let it cool to room temperature.
  2. Make this keto pie crust or your favorite almond flour crust. Don't bake the crust, keep it in the fridge while preparing the pie filling.2 teaspoons lime zest
  3. Add the cream cheese and the sugar-free condensed milk to a large bowl, and mix with a hand mixer until smooth.
  4. Whisk in the lime juice and the lime zest (or you can set the zest aside and add as topping, see notes) until fully combined. The mixture will seem thicker.
  5. Taste the pie filling, you can adjust sweetness now if desired by adding some keto sweetener to taste.
  6. Pour the pie filling into the Graham cracker crust and smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 8 hours or overnight.
  7. Add garnishes after pie is set, just before serving.

Notes

  • I use a 9" pie pan with removable bottom for this recipe. To make serving easier, butter the pan generously and place a disc of parchment paper at the bottom.
  • The lime zest adds flavor to the pie, but it also takes away from its smoothness. If you prefer a fully smooth pie, don't mix the zest in. Just add it later as topping.
  • If you wish to make the pie sweeter, you can add any keto sweetener you prefer, but a liquid sweetener (like stevia or monk fruit drops) will work best because it will dissolve quicker.
