Keto Low Carb Pina Colada
Creamy, delicious, keto-friendly, and low carb pina colada cocktail made with coconut milk and white rum. This low-sugar recipe is certainly going to be a favorite of yours.

Ingredients
- 1 cup coconut milk
- 3 oz white rum (about 90 milliliter)
- ½ cup diced pineapple
- ½ teaspoon pineapple extract
- ⅓ cup monk fruit sweetener or your favorite low carb sweetener (use more if preferred)
- 2 cups Ice cubes (optional)
- Toasted coconut flakes or pinapple slices (these are optionally used as garnish)
Instructions
- Add the coconut milk, diced pineapple, white rum, pineapple extract, ice cubes, and monk fruit sweetener to a blender then process at high speed until creamy and smooth.
- Pour into glasses then garnish with sliced pineapple or toasted coconut. Serve the low-carb pina colada chilled, preferably in frozen glasses.

Notes
- TIP: You can garnish your pina colada with a slice of pineapple or toasted coconut flakes. If using toasted coconut flakes, I would advise you to keep an eye on the pan during toasting, as coconut tends to burn very quickly. Once toasted, transfer the coconut flakes to a plate and allow them to cool. To decorate, dip the top of your glasses in water then dip into the toasted coconut. Freeze the glass so the decoration sets.
- Storage and making ahead
- This drink is best consumed immediately. Whenever I can, I try to serve my low-carb pina colada in chilled glasses, decorated with some toasted coconut flakes or sliced pineapple pieces. I do not recommend making the cocktail ahead as the creamy part tends to separate from the rest of the liquid in the drink.
