Keto Mac and Cheese
Made with nutrient-packed cauliflower coated in a rich and creamy, cheesy sauce, this Keto Mac and Cheese is so good and has only 5 grams of net carbs per serving! This dish will satisfy your pasta cravings and is so easy to make- all you need is 5 ingredients (plus salt and pepper) and 30 minutes!
Ingredients
- 6 cups cauliflower 1 head of cauliflower, florets
- 1 tablespoon butter unsalted
- ¾ cup heavy whipping cream
- 2 ½ cups cheddar cheese shredded, divided use
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
Instructions
- Preheat oven to 375°F.
- Steam the cauliflower for 5 minutes until partially cooked. You can either do this in a steamer or in the microwave. To steam the cauliflower in the microwave, place the florets in a large microwave-safe bowl and add a few tablespoons of water. Cover the dish and microwave for 5 minutes.
- Meanwhile, melt the butter in a large sauté pan over medium heat and add the heavy cream. Once the cream begins to simmer, reduce heat to low. Add 2 cups of grated cheese, salt, pepper, and garlic powder and whisk until cheese is melted and sauce is thickened and smooth. Add the cauliflower to the saucepan and stir to coat all of it with the sauce.
- Pour the mixture into a baking dish sprayed with cooking spray. Sprinkle the remaining ½ cup cheese evenly over the top. Bake in the oven 15-20 minutes until bubbly. Turn on the broiler and cook another 2-3 minutes until top is lightly browned.
