Keto Mashed Potatoes Recipe

Ingredients

  • 3 pounds Rutabagas peeled
  • 1/4 cup unsalted butter melted
  • 1/3 cup heavy cream
  • salt and pepper to taste

Instructions

  1. Chop rutabaga into bite-sized bits.
  2. Add to a pot of salted water and bring to a boil. Cook until tender enough to stick a fork in them easily.
  3. Drain the water and mash the tender rutabaga with a fork or hand mixer until smooth.
  4. Add melted butter and mix. Add heavy cream gradually and blend until smooth, creamy, and thick. Serve warm!
