Ingredients

  • 1 egg at room temperature, large, pasteurized, yolk
  • 1 teaspoon Dijon mustard
  • 1 3/4 teaspoons lemon juice fresh
  • 1 cup avocado oil
  • 1/8 teaspoon salt plus more to taste

Instructions

  1. In a medium bowl, whisk together the egg yolk, Dijon mustard, and lemon juice until smooth.
  2. Continue whisking as you gradually incorporate the avocado oil, beginning with a few drops and then pouring it in a thin, steady stream until the mixture thickens.
  3. Mix in the salt, then taste and adjust the seasoning as necessary. Transfer the mayonnaise to a container and chill it in the refrigerator.
