Keto Mixed Berry Crumble

This Mixed Berry Crumble is loaded with juicy blackberries, blueberries and raspberries topped with a streusel crumble topping and baked until crisp.

Ingredients

For the Berries
  • 2 cups blackberries
  • ½ cup fresh blueberries
  • 1 cup fresh raspberries
  • 3 tablespoons  monk fruit/allulose
  • juice and zest of ½ lemon
  • ¼ teaspoon xanthan gum
For the Crumb Topping
  • 1 cup Super Fine Almond Flour
  • ⅓ cup pecans chopped
  • ¼ cup grass fed butter melted
  • ¼ cup brown swerve
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Instructions

  1. Preheat oven to 375°F.  Mix the swerve and Xanthan gum in a cup, then set aside.
  2. Add the berries, lemon juice and zest to a large bowl.  Sprinkle the sweetener and xanthan gum over the top and toss until well coated.  Pour the mixture into a buttered glass or ceramic baking dish.
  3. In a separate bowl, add all the crumble topping ingredients, except for the brown sweetener and butter, then whisk.  Mix in the brown sweetener and melted butter. Sprinkle the crumble over the top of the berries.
  4. Bake for 30 minutes, then increase the temperature to 425°F and bake for an additional 5 minutes or until the crumble is crisp.  Allow to cool slightly before serving with a scoop of Keto Vanilla Ice Cream or whip cream on tpp.

Notes

  • If the crumble topping starts to brown too quickly, lightly tent it with aluminum foil and finish baking until the juices from the berries start to bubble around the edges.
  • For the berry filling,  you don't have monk fruit/allulose blend on hand, you can use monk fruit or Swerve instead.  
  • For the streusel crumble topping, try to stick to using the Swerve Brown, because though I typically prefer the brown monk fruit/allulose blend, it won't crisp up as well.
  • If you don't have pecans on hand, you can substitute with chopped walnuts instead.
