Keto No-Bake Cookies
Satisfy your sweet tooth with these Keto No-Bake Cookies! Coconut and peanut butter make for the perfect combo in this low-carb, gluten-free treat!
Ingredients
- 1/2 cup peanut butter
- 2 tablespoons butter
- 4 tablespoons Swerve sweetener powdered
- 1/2 teaspoon vanilla
- salt pinch
- 1 1/4 cups coconut flakes unsweetened
Instructions
- In a large pot melt the peanut butter and butter over medium heat.
- Once melted, remove from heat and whisk in the Swerve. Once mixed, whisk in the vanilla and a pinch of salt.
- Stir in the coconut flakes.
- Drop onto a parchment paper-lined baking sheet and press out about 1/3 inch thick.
- Refrigerate until firm, about 1 hour.
- Remove from the cookie sheet and store in the fridge.
