Ingredients

Peanut Butter Bars:
  • 2 cups almond flour Super Fine
  • 1 cup peanut butter unsweetened
  • 1/2 cup butter melted, see note, unsalted
  • 1 cup confectioners sweetener sugar-free
  • ½ tsp salt sea salt
Chocolate Layer:
  • 1 ½ cups sugar-free chocolate chips
  • 2 Tbsp butter

Instructions

  1. In a mixing bowl, combine the peanut butter, melted butter, almond flour, sugar-free confectioners sweetener and sea salt. Stir well until completely combined. A thick dough will form. 
  2. Line a 9” x 5” loaf pan or 8” x 8” cake pan with parchment paper. Transfer the peanut butter mixture to the parchment-lined pan, and spread into an even layer.
  3. Microwave the chocolate and butter in a microwave-safe bowl for 20 second intervals, stirring well between intervals, until melted, about 40 to 60 seconds.
  4. Pour the chocolate mixture over the peanut butter layer and freeze for 2 hours, or until the bars are set up.
  5. When you’re ready to serve, remove the bars from the pan and transfer them to a cutting board. Use a sharp knife to slice desired sized bars. Enjoy!

Notes

  • For a dairy-free version, substitute melted butter with coconut oil.
  • If using salted butter, omit the added sea salt or adjust to taste.
  • Non-low-carb eaters can replace the sugar-free sweetener with regular powdered sugar.
