Keto No-Bake Peanut Butter Bars
Keto No-Bake Peanut Butter Bars combine almond flour, peanut butter, and butter into a dense, rich base topped with a smooth, melted sugar-free chocolate layer. These bars set in the freezer, resulting in a firm, sliceable treat that retains a creamy texture. The use of almond flour and sugar-free sweetener offers a low-carb alternative for those following ketogenic diets, with a balance of salty and sweet flavors enhanced by the optional sea salt. The bars are straightforward to prepare with no oven time required, making them a practical dessert or snack option.
Ingredients
Peanut Butter Bars:
- 2 cups almond flour Super Fine
- 1 cup peanut butter unsweetened
- 1/2 cup butter melted, see note, unsalted
- 1 cup confectioners sweetener sugar-free
- ½ tsp salt sea salt
Chocolate Layer:
- 1 ½ cups sugar-free chocolate chips
- 2 Tbsp butter
Instructions
- In a mixing bowl, combine the peanut butter, melted butter, almond flour, sugar-free confectioners sweetener and sea salt. Stir well until completely combined. A thick dough will form.
- Line a 9” x 5” loaf pan or 8” x 8” cake pan with parchment paper. Transfer the peanut butter mixture to the parchment-lined pan, and spread into an even layer.
- Microwave the chocolate and butter in a microwave-safe bowl for 20 second intervals, stirring well between intervals, until melted, about 40 to 60 seconds.
- Pour the chocolate mixture over the peanut butter layer and freeze for 2 hours, or until the bars are set up.
- When you’re ready to serve, remove the bars from the pan and transfer them to a cutting board. Use a sharp knife to slice desired sized bars. Enjoy!
Notes
- For a dairy-free version, substitute melted butter with coconut oil.
- If using salted butter, omit the added sea salt or adjust to taste.
- Non-low-carb eaters can replace the sugar-free sweetener with regular powdered sugar.
