Ingredients

  • 5 ounces smoked salmon
  • 1 cup Monterey jack cheese shredded
  • ⅓ cup goat cheese crumbled
  • 6 egg whole
  • ⅔ cup heavy cream
  • 1 tablespoon chive chopped, fresh
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

    Cup of Yum
  1. Preheat oven to 350F.
  2. Chop the smoked salmon into small pieces and add it into a ceramic or glass pie dish, that’s been sprayed with nonstick spray. Reserve a small amount to add over the top right before baking.
  3. In a large mixing bowl, add in the eggs, heavy cream, salt and pepper, then whisk until well combined.
  4. Chop up the chives and add them over the salmon. Then add the Monterey jack cheese. Pour the egg mixture and crumble the goat cheese on top, and finally add the remaining pieces of salmon.
  5. Bake for 35 minutes or until the eggs have set. Allow to cool for a few minutes before cutting into wedges and serving. Store leftovers in an airtight container for several days or freeze.
